Homemade Everything Bagels

Sometimes I impress myself. It’s hard to do, because generally, I’m incredibly hard on myself, but every once in a great blue moon it will happen. And when it does…

I have to admit that I have never really had anything ‘everything’. I know. I’m ridiculous, but it’s true. Truth be told, I don’t like barely anything….so the thought of having everything was a little daunting. When Dustin and I started dating, everything was all he would eat. And even his kids, who are insanely picky were requesting everything bagels. Clearly I was missing something. So I tried it.

And they are magical. So naturally that led me to buying everything seasoning (The best place to buy it is Trader Joe’s! In case there isn’t a TJ near you, Amazon to the rescue!) and putting it on everything. (Get it, everything seasoning….on everything?) Which then led me to making my own everything seasoning (try it, you will thank me) and now literally everything is seasoned with everything.

But back to the bagels.

If you would have told me that I would be that kind of woman who would be making homemade bagels, I would have laughed at you. A business, three dogs, seven kids and I would have life together enough to be making homemade bagels!?!

But I did. I totally did it. And they are so.freaking.amazing. Not only are they amazing, but since I photographed these bagels for this post, we’ve made them twice more. I can’t even eat the bagels from our local bagel shop anymore. And bagels from the store? Forget it. This is all I want.

I’ve learned not only about how fantastic everything seasoning is, but how much it is worth it to make homemade bagels. Combined, they are nothing short of amazing. But if for some reason you are weird and don’t like everything seasoning (for real, have you ever really tried it?) you can make this recipe with a hundred other combinations: plain, chocolate chip, cinnamon raisin, mmmm….. This is the only bagel reason you will ever need!

Ingredients

Instructions
  1. In a bowl, pour ½ cup warm water, yeast and sugar.

  2. Allow it to sit, unstirred, for about 5 minutes until it is foamy.

  3. Mix together.

  4. In a second bowl, combine flour and salt. Make a well in the center and pour the water/yeast mixture.

  5. Mix together. If needed, add a small amount of water.

  6. Knead for about 10 minutes or until dough is elastic and smooth.

  7. Brush with oil and place in a bowl in a warm place. Cover and let rise for 1 hour. Punch the dough and let rise for 10 minutes more.

  8. Divide into 8-10 balls.

  9. In the center of the ball, make a hole with your thumb.

  10. Place on a greased cookie sheet, cover and let rest for 10 minutes.

  11. Preheat oven to 425. On the stove, fill a large pot with water and bring to a boil.

  12. Drop the bagel into the boiling water and let sit for 1 minute. (For extra chewy bagels, sit for 2 minutes) Flip and repeat on the other side.

  13. Place on the baking sheet.

  14. Brush the top of the bagels with egg white and sprinkle with Everything But The Bagel Seasoning.

  15. Bake for 20 minutes.

  16. Remove from oven and let cool.

Breakfast is a big deal in our house. Like a really big deal. We love it all – pancakes, waffles, eggs, french toast….and of course sausage! While we try to have a good breakfast every morning, on holidays and birthdays we try to do something a little special. Sometimes, even on weekends or days off, mornings are still hectic. Especially when you throw in the excitement of things like Easter baskets! This recipe is super simple to put together and while it is baking it gives you a chance to get out of the kitchen and be with your family! Another bonus: It looks so pretty on a plate for your holiday brunch! Oh and an even bigger bonus is that the clean up is SO simple. Seriously, 5 minutes and clean up is done! WOO HOO!

This is quickly becoming one of our favorite recipes, but I think it is perfect for spring and Easter because not only for the reasons above, but it also kind of looks like a nest! It doesn’t get more spring than that! 🙂

To make it, you honestly probably have everything in your refrigerator now! I like to use Odom’s Tennessee Pride® Country Sausage. You can find it at Walmart! We usually get two rolls (the mild and hot) and make them both to get a nice mix in our breakfast rings. And the next morning we use the leftovers for a big batch of biscuits and gravy! YUM!

Besides sausage, you will need eggs, cheese, crescent rolls and if you are like me, veggies! I love tomato and green pepper in mine! But really, you can add anything to yours – mushrooms, onions, or whatever your family likes!

  1. Preheat your oven to 375.

  2. In a small saucepan, cook the sausage and drain. Remove and put in a small bowl to cool.

  3. Wipe out the excess grease of your pan and add your 5 eggs and scramble. Remove from pan and set aside.

  4. Cover a baking sheet with parchment paper. Open the crescent rolls and make a star pattern. You will want to overlap the edges and they should be pretty tight together.

  5. Begin to layer your ingredients on the crescent rolls. I start with a little cheese and then add the sausage.

  6. Add the scrambled eggs and veggies.

  7. Top with more cheese!

  8. Fold the crescent ends towards the middle of the ring.

  9. It will look like the fillings aren’t fully covered with the dough and that’s ok!

  10. Beat an egg in a small dish and brush over the crescents. This is optional, but it really gives the ring a nice color to it!

  11. Bake at 375 for about 20 minutes or until golden brown.

  12. Slice into wedges and serve!

If you were to ask my family what their favorite breakfast was, they would easily say waffles. I don’t even have to think about it! We are constantly coming up with new waffle ideas – apple butter waffles, waffles with bacon in them, chocolate chip waffles…even brownie waffles! To say that our waffle maker was one of the best investments we have made in the kitchen is definitely an understatement!

The other day I was picking up some things at Meijer (I love that place!) and it totally hit me! Why don’t I put yogurt in our waffles? What a great way to get this carb-licious breakfast a bit of a protein boost!

I decided to use Dannon All Natural yogurt in my waffles. This is a plain yogurt made with all natural ingredients. It comes in a larger size than a traditional yogurt snack would come in, which is awesome because this is an awesome substitute for things like sour cream, cream cheese, mayonnaise and so much more! I try to always have a container of this in my refrigerator! Plus, it’s good in a bowl by itself. 😉

The awesome thing about this recipe is that you can totally use other kinds of yogurts as well! Dannon has a Whole Milk Yogurt that is GMO free, lower sugar and comes in a variety of flavors. And of course there are always the Dannon Classics. So get crazy! Add a little mixed berry, vanilla or peach to your waffles! Yum!

We like to top our waffles with syrup of course, but also a dollop of yogurt. You know, because it’s amazing! Did you know that just one cup of yogurt is packed with protein, calcium and vitamin D? It’s a great way to start your morning to help you fuel through your day and give you the energy you need.

  1. Plug your waffle maker in and let it warm up.

  2. In a bowl add eggs, milk and Dannon Yogurt together. (If you would like you can add a teaspoon of vanilla too!)

  4. Add the sugar, flour, baking powder and salt.

  5. Whisk together. I let my mix sit for a few minutes. You will notice it get a little bubbly. I’ll be honest, I’m not 100% sure if this is necessary! My grandmother always told me to let it sit, so I’ve always let it sit! Never question Grandma’s cooking techniques! 😉

  6. Spray your waffle iron with nonstick spray and scoop out some waffle mix. Cook until each side is a golden brown – usually only about 3 minutes per side, depending on how well done you like it (my son likes his nice and crispy!) and how hot your waffle iron runs.

  7. Top with your favorite toppings and enjoy!

Happy fall y’all! We’ve been super busy around here enjoying everything fall has to offer and just being outside! And inside, we’ve been busy cooking up all of our fall favorites!

Do you follow our slow cooker website? If so, then you know that we recently made the most amazing slow cooker apple butter. While I’ve been dousing my bagels with it and making my famous Apple Butter Banana Bread, I had one more recipe I wanted to use our homemade apple butter for.

Fall waffles! Not just any fall waffles! Apple Butter Waffles…with a cinnamon syrup.

I saved this recipe from Sugar Dish Me last year and I have been looking forward to making it for a while now. I’m honestly not sure why I waited almost a year, but I did and to be honest, now I’m a little sad that I’ve missed out on a year of apple butter waffles. Don’t feel too badly for me though, I see us more than making up for it!

These apple butter waffles are perfect – slightly crisp on the outside and nice and fluffy on the inside. My favorite! We topped ours with cinnamon syrup, whipped cream and a dash of cinnamon. SO good!

Warning: You will end up making waffles for breakfast and even dinner …. a lot! You just won’t be able to get enough!

Instructions
  1. In a bowl, mix the flour, baking powder, sugar and salt.

  2. In a separate bowl, mix the milk, apple butter, eggs, and vegetable oil.

  3. Add your wet ingredients to your dry ingredients mixing well.

  4. Plug in your waffle maker and allow the mixture to sit while the waffle iron heats. Cook your waffles to desired crispness. I cooked mine for about 3 minutes each side.

  5. For the syrup: In a small saucepan, combine the brown sugar and cinnamon. In a small bowl or measuring cup, mix the cornstarch and water. Pour into the brown sugar mixture, combine and bring to a simmer. Stir until the brown sugar dissolves. Remove from heat and add the butter and vanilla extract.

Stuffed Cinnamon Rolls – Our Best Breakfast Recipe

Breakfast is the most important meals of the day. And honestly, it’s the tastiest! If I had to choose one meal to eat for the rest of my life, it would hands down, most definitely be breakfast. Eggs and bacon, french toast, waffles, omelettes, bagels and cream cheese….oh man.

I love breakfast!

With all of the delicious options you have at breakfast, it is really hard for me to choose a favorite. But if you twisted my arm I might just say cinnamon rolls. And these stuffed cinnamon rolls are an absolute dream. Seriously, you will be dreaming of them!

I also love the fact that you can stuff them with any kind of filling. These are delicious with apple, strawberry, blueberry or even cherry.

Stuffed Cinnamon Rolls – Our Best Breakfast Recipe

This is one of my favorite breakfast recipes! Use your favorite fruit filling to create your ultimate breakfast!

Ingredients
  • 2 teas. Yeast
  • ¼ Cup Sugar
  • ¼ Cup Warm Water
  • ¾ Cup + 4 teas. Milk
  • ½ Cup Butter
  • 3-4 Cups Flour
  • ½ teas. Salt
  • 1 Egg
  • 1 teas. Cinnamon
  • 1 Cup Cherry Pie filling, pureed in a blender (Can substitute for other pie filling flavor)
  • ¾ Cup Powdered Sugar

Instructions
  1. In a small bowl combine the warm water, Sugar and yeast. Set aside.
  2. In a small sauce pan over medium heat, warm the ¾ cup milk until it is steaming but not simmering.
  3. Reduce the heat to medium low, add the butter and stir until melted. Remove from heat and let cool to lukewarm.
  4. In a mixing bowl combine 2 ½ cups of flour and salt.
  5. Slowly mix in the milk mixture then the egg.
  6. Stuffed Cinnamon Rolls - Our Favorite Breakfast Recipe
  7. Slowly add additional Flour until a dough forms and pulls away from the sides of the bowl.
  8. Place on a lightly floured surface and knead until the dough is smooth. Place back in the mixing bowl and cover. Set in a warm area and let rise 20 minutes. I use the oven with the light on.
  9. Preheat the oven to 375˚ (Remove the resting dough first.)
  10. Roll the dough out on a floured surface into about a 15×10 inch rectangle.

  12. Sprinkle the rectangle with the Cinnamon.
  13. Spread the pie filling over the dough leaving a 1 inch gap along one of the long edges.

  15. Roll the dough so you end up with a 15 inch roll. Pinch the seam to seal. You may need to remove some of the filling as you roll so the dough can be sealed.
  16. Cut the roll with a dough cutter or sharp knife into 12 rolls. I start by cutting it in half. Cut the halves in half, giving you 4 rolls. Cut those in thirds.

  18. Place in a baking dish lined with parchment paper and bake at 375˚ until lightly browned, 20- 25 minutes.
  19. In small bowl Mix together the Powder sugar and 4 teas. Milk. Drizzle over the rolls and serve warm.

I’m a sucker for breakfast. I love scrambled eggs, pancakes, hash browns, and bagels. But one of my favorite breakfasts ever is French Toast. I absolutely love it. But it’s one of those breakfasts that only happens on the weekends every so often, because I’m not sure about you, but I don’t have time to make a big breakfast during the week.

I’ve tried the over night French Toast bakes and they are really good (remind me to share my recipe for pumpkin strusel baked french toast because it’s really good!), but sometimes the baked french toasts can get a little soggy in the middle. Call me a french toast snob.

I like my french toast to have a little crispiness to it.

Crisp. Not soggy.

Enter the French Toast Pull – Apart Muffin.

You can make it ahead of time.

It doesn’t get soggy.

It tastes delicious.

But of course we just had to take it up another notch. With bacon.

Because bacon makes everything better.

Yes. These are everything I thought they would be and more. We made an extra batch and Josh had breakfast all week!

  1. In a large bowl beat the eggs. Then add the milk, sugar, vanilla extract, cinnamon, and salt and mix well. Add the French bread cubes and gently stir coating the bread. Cover and put in the refrigerator for at least 15 minutes. Spray a muffin tin with cooking spray and pre-heat the oven to 350 degrees Fahrenheit.

  2. Fill the muffin tins up halfway with the bread mixture. Using half of the chopped bacon, add some bacon crumbles on top of each.

  3. Put another layer of the bread mixture and top with the remaining bacon.

  4. Bake at 350 for 15-20 minutes or until golden brown. Let sit for 5 minutes.

  5. Top with syrup and powdered sugar if desired.

Citrus Bliss Smoothie

 

Ever since I got my new Blendtec Blender I have been on the look out for some great new smoothie recipes to try! This one is one of our new favorites! We call it the Citrus Bliss Smoothie and it’s got tons of vitamin C packed in! We will be drinking lots of these all winter long to help combat against colds. Plus, it reminds me of summer. Which will come in handy when we are fighting -20 temperatures! It’s a mix of orange, tangerine, nectarine and apple. It’s sweet, refreshing and absolutely delicious.

Another thing I love about it is that I can add some extra fiber right in and you would never know! Yes, we are going to talk about fiber for a second. Fiber is so important and most of us don’t get enough. I know that I don’t didn’t. Most adults only get 15 grams of fiber a day while The Institute of Medicine recommends that women get 25 grams and men get 38 grams. A day! Getting enough fiber helps us to maintain a healthy weight and lowers our risk or diabetes and heart disease. Plus, when our bodies are working at our best – we just plain feel better.

So in an effort to be healthier I have been working on getting more fiber in my diet. I’ve been trying to add more fiber filled foods, but sometimes I need a little extra help. So I have been supplementing with Metamucil.

I honestly was a little intimidated purchasing this for the first time! I didn’t know how it would taste or how it would effect me. I was really surprised when I got to Meijer and saw that the Metamucil had so many products and flavors to try. Right now in my cabinets I have the Berry Smooth and Orange Smooth, but I think that the Pink Lemonade will be added to our collection too! I’ve been adding a serving to my smoothies each morning. You can’t even taste them in there! And as an added bonus, it has been helping to keep me full longer.

Ingredients

  • 1 Tangerine
  • 2/3 cup Yogurt, plain
  • 1 Nectarine
  • 1 Apple, small
  • 2 1/2 cups Orange Juice
  • 2 tsp Metamucil
  • Ice

Instructions

  1. Peel the tangerine. Add ingredients to blender and blend until smooth. Pour in a glass and enjoy! Easy!

I make sure Sam has a good breakfast but on a busy weekday morning I grab an English muffin—with jam and peanut butter—a banana and a green tea, which I eat in the car. I eat in the car waaay too often as you could tell if you could see the crumbs under the seat.

Well, when I think of it the night before I make a batch of baked oatmeal. It’s SO good and the combinations are really endless. But most of the time, let’s be honest. I don’t think ahead (often). We are big cereal and banana fans. I’m trying to be good and eat before we leave for school because last year we got in a bad habit of going through the Starbucks drive through on the way to school, a lot. I will say, they have yummy breakfast sandwiches! 🙂

My daughter loves cereal and will eat Mini Wheats with blueberries every day which is quick and easy and works for me! My son likes frozen waffles and French toast sticks with peanut butter on them and fruit, usually blueberries or raspberries. I try to fill them up on a school day and get some protein and fruit in them. Now, on the weekends? My husband cooks and makes blueberry pancakes (can you tell we like blueberries yet?) on Saturday and scrambled eggs on Sunday. Those are my favorite days, of course!

Kay, so I’d love to say something really awesome like homemade biscuits and gravy – but uhhhhh no. My go-to breakfast on a busy weekday morning is coffee. Occasionally I’ll squeeze in a granola bar and I intentionally buy the ones with protein so I get that little bit in the mornings. Now, on the weekend – it’s all kinds of breakfast up in our house! Confession. Fall is my favorite time of year. Hands down. I love the weather changing into nice in the day and perfect for hoodies in the evening. I love the bonfires (and s’mores!) that happen. Here in Indiana, fall is easily the prettiest season. The trees turn gorgeous shades of orange, red and yellow.

But it’s also time for apples. And pumpkin. And man do I love those! So consider this your warning. Expect lots of apple and pumpkin recipes to come! 🙂

Last year, I found a recipe that I really wanted to try out from Crazy For Crust. Of course, I had to put my own spin on it. I added one ESSENTIAL ingredient – pumpkin! And the result is pure amazing-ness. These are so good. I don’t dare have them for breakfast! This is for sure a delicious dessert! (Ok. Maybe I had a small leftover one for breakfast this morning…)

This caramel frosting was SO easy and SOOO good.  Like forget the cake and grab a spoon good!!!  Pinning so I don't lose this recipe!!

Now you could stop with just the cinnamon rolls. Maybe add a dollop of vanilla ice cream? And you will be happy. It will be delicious. BUT. Take the 5 minutes and make the frosting. It will blow your mind! You can do it! Go for the full experience! 🙂

Apple Pumpkin Cinnamon Rolls With Caramel Frosting Recipe

Ingredients

  • For the Filling:
  • 2 tabelspoons butter
  • 2 cups diced Granny Smith Apples (about 1 1/2 medium apples, diced)
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/3 cup canned pumpkin
  • For the rolls:
  • 1 tube crescent rolls (I used the large ones)
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons canned pumpkin
  • For the frosting:
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 2-3 tablespoons heavy whipping cream, divided
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 F.
  2. In a skillet, melt 2 tbsp butter. Once it is melted add your diced apples, sugar and cinnamon. Mix and let cook for about 5 minutes.
  3. Add the pumpkin to the apple mixture and combine well. Let cook for about 10 minutes stirring occasionally.
  4. Take off the heat and let cool. Letting the mix cool is important! If you try adding the filling while it is hot, it will be harder to roll.
  5. Open the tube of crescent rolls and try to keep the rolls in one large rectangular piece. Once it is unrolled, press together any seams that have come apart.
  6. Spread a thin layer of pumpkin (you may not need all 3 tbsp) on the dough.
  7. Then, spread the cooled apple pumpkin mixture evenly on the dough.
  8. Start at one end and roll as tightly as you can.
  9. Once they are rolled, use a knife (serrated knife is the easiest) to cut into about 8 pieces.
  10. Place on a lined cookie sheet. (I lined mine with wax paper.) Bake for 11-14 minutes or until they start to get a golden brown color on the crust.
  11. While the cinnamon rolls are baking make your frosting! I just used the same skillet that the apple and pumpkin mixture was in.
  12. Add your butter and brown sugar to the skillet and let it melt. You will want to be stirring it constantly for about 2 minutes.
  13. Add 1 tbsp cream and stir for 30 seconds or so.
  14. Remove from heat and add 1 tbsp cream, vanilla and the powdered sugar. Whisk together. If needed, add the last tablespoon of cream.
  15. Add frosting to cinnamon rolls and enjoy!

Coffee-Mate For Breakfast – French Vanilla Pancakes

I am by far, NOT a monring person. I hate rolling out of bed early. Unfortunately, Joshua’s bus comes at 6:45 in the morning. THAT is too early for me! It’s dark, I’m not functioning yet, and some mornings it can be cold! YUCK. But what can you do right? Other than to suck it up!

Coffee is a MUST for my morning routine. And Coffee-Mate creamer is the first thing I grab to add to it! The other day at Target I was getting my favorite coffee creamer and I noticed these cool new bottles. Turns out they were designed by David Broomstad! Awesome right!? I immediately put the French Vanilla in my cart.

Flash forward to the next morning and as I was making my coffee I had a brilliant idea. Yes. An idea. That was brilliant. At 6 in the morning! Who knew right?

French Vanilla Pancakes

Add some Coffee-Mate French Vanilla Coffee Creamer to our pancake mix! So I ran to the cabinet and pulled out a box of pancake mix and whipped up a batch adding a tad of creamer to the mix. Josh was surprised we were having pancakes on a Tuesday morning before school. Pancakes are usually only a Saturday morning treat at our house!

You guys! These were really good! The coffee creamer gives just enough flavoring! I actually can’t wait to try it with other flavors too! Coffee-Mate really made a splash in my day!
