Let me tell you a story. Once upon a time, there was a very beautiful woman named….hmm….ohhhh….Amanda. And Amanda and her Prince Charming lived in a charming home with their four adorable children. Everyday, Amanda would go to the freezer to pull something out to thaw for dinner and think of all of the magical meals she would prepare with love for her family. When evening came, she would chop, saute and create the most amazing feasts. Prince Charming would come in and say, “Looks good, babe” and make himself a plate. Amanda would beam with pride. Child A would come in and say, “Thanks for dinner” and Amanda would be happy. Child B would run into the kitchen and say, “Thanks. I’ll just have this” and put one part of the feast on his plate. But Amanda would still smile. Child C would bounce in and say, “Ewww. That looks disgusting. I don’t like anything that doesn’t come out of a box.” Amanda would cringe. And finally Child D would pop in and say “Can I just make Ramen noodles? Why don’t you ever make something we like?” And Amanda would be frustrated.

The next night, Amanda thought she would make her life easier and make something plain, gross and out of a box. Prince Charming walked in and winced, but said “Looks good babe” and made himself a plate. Child A said, “Thanks for dinner”. Child B said, “Hmmm. Maybe I’ll just have a PB and J.” Child C said “YESSS!” Then took a bite and said “Never mind, I don’t like this.” And Child D said, “I don’t like it this way. I’m just going to have Ramen noodles.” And Amanda gave up and vowed that she would from that day forward, only make things that she liked for dinner ever again because if people were going to complain, then she would at least be happy. And she did. And she never heard the sounds of complaining again over her favorite dinners.

Ok, so I made that story up. Well, sort of. Moms! Please tell me I’m not alone in the dinner time blues! Luckily, I have a few recipes that I know I can whip up that I love and I know that all four kids will gobble up and even ask for seconds on. Those my friends are called keepers. And this one pot cheesy taco spaghetti recipe is a keeper! (Bonus is that is super simple to clean up!)

Instructions
  1. Heat olive oil in a large stockpot or Dutch oven over medium high heat.

  2. Add ground beef and cook, crumbling the beef as it cooks.

  3. Stir in taco seasoning.

  4. Add the Rotel, tomato paste, spaghetti and 3 cups water.

  5. Bring to a boil and cook until pasta is cooked through.

  6. Remove from heat and top with cheeses. Cover until the cheeses have melted.

  7. Garnish with tomato and cilantro.

There isn’t much that I like better than a plate full of gooey, creamy macaroni and cheese. It’s the ultimate comfort food. And Josh has grown up to be just as big of a macaroni fan as I am. Now over the years we have made many different kinds of macaroni and cheese. Sometimes we get a little fancy and use smoked cheddars and Gouda. Sometimes we make it in our slow cooker. And today, we’ve made some with yogurt. Yes, yogurt!

I’ve been on a bit of a yogurt kick lately. Remember when we added it to our waffles? YUM! Well, we’ve done it again, this time just with our macaroni and cheese! The results?

This is totally a keeper. Beyond creamy. Beyond gooey. And most importantly, beyond cheesy. I don’t know about your house, but it doesn’t really matter what holiday mean it is….macaroni and cheese ALWAYS has a spot at our holiday table! Thanksgiving? It goes with turkey! Christmas…you can find the mac and cheese right next to the ham. 4th of July? Awesome with BBQ! Every single holiday…it’s always there! This recipe is awesome not just because it’s so delicious, but because it makes a lot. It’s perfect for feeding a crowd.

(Tip: After we made ours the other night, I put it in our refrigerator for a little while to really ‘set’. Then, I was able to cut it easily into individual slices and I put each slice on a sheet of wax paper and vacuum sealed it a bit – just be careful not to smoosh it! Pop it into the freezer and ta da! We’ve got individual homemade frozen sides/dinners for super busy nights!)

Yogurt Waffles

Before the recipe – just a little bit about the yogurt. I used Dannon All Natural Yogurt. You should always have a container of this in your refrigerator! Not only is it super good on it’s own or with some toppings (like fresh fruit!) but you can use it as a substitute in so many different recipes! I get mine at Meijer because it’s my favorite place to grocery shop! (Get the M-Perks app!)

We get our favorite comfort food … and with the addition of yogurt! This recipe was originally from my Grandmother, but hers called for a lot more whipping cream and butter. (That must be why it was so good!) Using the comfort we really eliminated most of that! I’m all for substitutions! I can’t wait to bring my family’s favorite macaroni and cheese recipe to our holiday dinner…with my new little twist!

  1. Preheat the oven to 425. Boil the pasta and cook according to package’s instructions.

  2. In a large sauce pan, melt the butter. Once melted, whisk in the flour. Let cook for about 30 seconds.

  3. Add the milk, heavy cream and Dannon All Natural Yogurt. Whisk together and bring to a simmer.

  4. Add in the dry mustard, onion powder and salt and pepper.

  5. Turn down the heat and add the parmesan, cheddar cheese and soup. Stir until melted.

As a busy mom, I am always looking for new recipes that I can make in a flash and that everyone will eat without complaint. During back to school time, this is super-duper true. I need quick and easy meals — for breakfast and dinner so that I can accomplish everything that needs to be done before bedtime.

For us in the breakfast we like to grab a Jimmy Dean® breakfast sandwich. My kid’s favorite is the Croissant Sausage Egg Cheese. It doesn’t get quicker or easier than this! And they get gobbled up. We don’t just have them for breakfast; sometimes Joshua will come home and fix one for a snack too.2

TIP: Want a fun way to serve fruit? Make ‘kabobs’ with fun paper straws. The kids love the festive look and let’s face it. It’s much more fun to eat this way!

When it comes time for dinner, I like to make a homemade dish….with some pre-made help. Just like our Chicken Parmesan Stuffed Shells.

Now, if you like cheesy chicken goodness then this is the recipe for you! I don’t know what took me so long to think of putting together Tyson® Chicken Patties and our favorite dish of stuffed shells sooner. Luckily, one day while we were grocery shopping at Meijer it hit me. And our new favorite dish was born!

One thing that I know that I have in common with just about every other mother and father out there is this: we are busy! Between kids, work, and for us, homeschooling, that enough is plenty to keep me on my toes. But I totally have a confession for you.

I hate to cook. Actually, I don’t hate to cook. I don’t mind cooking. But, I hate cleaning up after cooking. I don’t know, apparently I have problems with chores that must be done in steps. Kind of like getting the clean, folded clothes from the laundry basket and hung in the closet. It’s a struggle for me. (Don’t judge!)

That’s part of the reasons I love my slow cooker so much! It’s easy clean up! Not to mention I don’t have to stand there and actually do the cooking. I’m busy y’all. I’m busy! 🙂 So today I’m sharing with you our favorite slow cooker chicken pot pie recipe. It’s so easy and so delicious.

I use the Lime scented (it has baking soda in it, which if you didn’t know is my secret weapon for getting burnt pans clean!). I’m getting a tad obsessed because while we were at Meijer yesterday I bought not only another lime, but they had a grapefruit and baking soda one too! My kids must think they smell good too because they make sure that we never run out of dirty dishes to use them on! 😉

  1. In your slow cooker, add 4 boneless skinless chicken breasts. (I put mine in frozen but fresh works perfectly as well!) Season with onion powder, salt, pepper and poultry seasoning.

  2. Cover with two cans of cream of chicken soup.

  3. Add the potatoes. Cover and cook on high for 4-5 hours or low for 7-8 hours.

  4. Remove the chicken and shred with a fork. It will be really easy to shred – the chicken should be nice and tender!

  5. Add the cream, parmesan cheese and bag of mixed vegetables. Mix, cover and let cook until ready to be served.

  6. Bake the biscuits as the directions indicate.

  7. Serve the pot pie mix over the biscuits.

Now, the secret to serving this is to layer your biscuits and pot pie filling. I cut our biscuits in half, putting the bottom half in the bowl first. Add some pot pie mix and then add the top half of the biscuit. Then top with some more filling. And of course, top with another biscuit half! It’s like a lasagna….but only with chicken pot pie.

My family gobbles this meal up. And the leftovers are awesome! You know how sometimes leftovers just aren’t near as good as when you had them the night before? That’s totally not the case with this!

If you were to ask me my favorite food, I would say that hands down, it’s pasta. I love it. Spaghetti, ravioli, macaroni, linguini, or penne… it doesn’t really matter. I am an equal opportunity pasta eater. It’s something I always keep stocked in our pantry, along with a variety of sauces of course.

So the other night when I asked Joshua what he wanted for dinner, it was music to my ears when he said he wanted some Alfredo pasta. Done! One easy dinner coming right up!

Broccoli Sausage Bow Tie Pasta

Like I said, we keep pasta pretty well stocked in our pantry, as well as jars of Prego red and white sauces. You never know when you’re going to need to whip up a pasta dish! Normally we just have a red sauce, so when I pull out the Prego Homestyle Alfredo, it’s an exciting treat. I decided to change it up a bit for this recipe by using bow tie pasta and adding smoked sausage and broccoli. This is the only way my son will eat broccoli without complaining, so this mom is taking full advantage!

This recipe is totally beyond easy. It only uses one pot and comes together in less than 20 minutes. Plus the Prego Homestyle Alfredo makes me feel like I’m getting a homemade sauce simmered for hours or going out to one of our favorite Italian restaurants all while cooking in my yoga pants. 🙂

There are only four ingredients for this dish and they are super simple!

  • Prego Homestyle Alfredo Sauce
  • Bow tie pasta
  • Smoked Sausage (sliced)
  • Bag of frozen broccoli

And making this recipe is even easier!

  1. Boil a large pot of water. Once the water is boiling, add your pasta and your smoked sausage to the boiling water. Cook according to your pasta’s instructions.
  2. In your microwave, cook your broccoli according to the package instructions.
  3. Drain the water from your pasta and smoked sausage.
  4. In your pot, warm the Prego Homestyle Alfredo Sauce on medium-low for a few minutes. Then return your pasta and smoked sausage to the pot. Add the broccoli and gently mix it together.

Serve with some Parmesan cheese, salad, and some breadsticks. Yum! It doesn’t get better than this!

I’m such a huge fan of easy dinners. That’s why I love my slow cooker so much! Josh has started with wrestling and we are busy with the holidays, choir practice, and you know, that whole drill. Basically, it’s been busy. Well, busier than normal.

So my slow cooker has made itself a permanent home on my counter top the past few weeks. It’s been so nice to have something ready when we get back. Not to mention, my house smells so good when I walk in the front door! The other night Joshua had his Holiday Choir Concert and so I really wanted to do something easy for dinner.

When I was at Kroger, I noticed in the freezer section that they had packages of Tyson® Premium Cornish Hens. I’ve never made them in the slow cooker, but I thought that they would make the perfect after concert dinner. Normally I roast a chicken, but that’s a lot of food for just two people! So I really like the idea of buying a pack of Tyson® Premium Cornish Hens! In fact, I’m not sure why it took me so long to to start buying them!

I did a simple (but so tasty!) seasoned hen in the slow cooker and served it on top of wild rice. It was so amazing! And Joshua thought it was pretty awesome that he got a whole hen all to himself. He’s 12 and eats more than I’ve ever seen someone eat before!

Halloween Dinner Idea: Mummy Meatballs

Halloween is one of my favorite holidays. We love coming up with fun costumes and dressing up. We take our pumpkin carving very seriously. And the whole house is decorated. So why would we not have a fun themed dinner? These mummy meatballs completely made my son’s night when I served them up. In fact, he’s requested them several times since! I’m more than happy to oblige since they are SO simple. This Halloween dinner idea is a winner!

Because these are so simple and you can make a big batch at a time, they also make the perfect party food. Not to mention, they are so fun!

Dunk your mummy in a side of marinara sauce (or brains as my son so elegantly put it!) and dinner is served. Yum, yum, yum!

Mummy Meatballs

Supplies & Ingredients:

½ lb ground Italian sausage

½ lb ground beef, turkey or chicken

1 egg

¼ cup Italian bread crumbs

¼ cup Parmesan cheese

Salt and Pepper to taste

1 tbsp Italian Seasoning

1 tsp onion powder

½ tsp garlic powder

Olive oil

1 package crescent dough (find it in your refrigerated section of the grocery store)

Candy Eyes

Black decorating gel

Instructions:

  1. Preheat your oven to the crescent dough’s instructions. Line a baking sheet with aluminum foil. Pour a bit of olive oil in a skillet and heat on medium heat.

  2. In a mixing bowl, add your meat, egg, bread crumbs, Parmesan cheese, and seasoning.

  3. Using your hands, gently mix everything together. One of the secrets to making great meatballs is to not over mix your ingredients.

  4. Form your meatballs and place in skillet.
  5. Brown your meatballs, cooking them almost all the way through.

  6. While the meatballs are cooking, unroll the crescent dough.

  7. Cut the dough into long strips.

  8. When your meatballs are done, pat dry and wrap one of the crescent roll strips.
  9. Place on your greased baking sheet.
  10. Bake according to the crescent dough’s instructions.

  11. Once baked, use a small drop of decorating gel on the back of a candy eye and attach to the mummy meatball.
  12. Serve with a cup of marinara sauce (or brains as my son put it) to dunk into.

What is better than Chicken Parmesan? Double Parmesan Chicken Parmesan. Seriously, isn’t everything better with cheese? More cheese.

And I found the secret weapon.

John Wm. Macy’s CheeseSticks. There are so many different flavors – original cheddar, smoked jalapeno, melting romano and so many more. (Not to mention dessert sticks!)

There are two different types of CheeseSticks. There are the original ‘sticks’ that have been twisted to perfection. They are light and airy and cheesy and, well, basically amazing.

They also have CheeseCrisps which are bite sized, but so full of flavor. These are perfect for dunking in dips, appetizers and curling up on the couch snacking on during Netflix binges. (If you are into that kind of thing…) 🙂

But as amazing as the CheeseSticks and CheeseCrisps are to munch on alone, they are also awesome for cooking with! We have made the world’s best chicken fingers (with a Smoked Jalapeno crunch!), crunched up the Madagascar Vanilla SweetSticks in our ice cream and have added the Original Cheddar to the top of our cheesy broccoli casserole. But hands down our favorite dish has been the Double Parm Chicken Parmesan.

Instructions
  1. Prepare your chicken by cutting, trimming the fat and patting dry.

  2. Heat olive oil in a deep skillet on medium heat.

  3. In a shallow dish, mix together the Italian seasoning, salt and pepper, onion powder and parsley. Add both of the crushed CheeseSticks and CheeseCrisps. Mix well.

  4. In a small bowl, beat egg.

  5. Dip the chicken into the egg and then roll in the CheeseSticks mixture.

  6. Place in the skillet and cook thoroughly.

  7. While the chicken is cooking, make your pasta as according to package instructions. In a small pot, heat up your spaghetti sauce.

  8. Dish a plate of spaghetti on your plate and place a piece of chicken on top. Immediately add shredded Mozzarella Cheese while the chicken is still very hot so it slightly melts.
