Amish Baked Oatmeal Its a Fabulous Life

One of my favorite breakfast dishes that I make anytime there is a breakfast pitch-in is Amish Baked Oatmeal. Every time I bring it people request the recipe.

It’s easy to customize! You can add in fruit like I did, but I’ve also made it without and later topped it with banana slices and a little maple syrup. Today I am going to share with you my favorite way to eat it.

The ingredients are simple.

Prep takes just about 5 minutes.

And when it comes out of the oven it’s like a yummy, baked granola. (Which just happens to be how I like my oatmeal!)

Eat it plain, drizzle a little Maple Syrup on it or

Top it with something delicious! (Like Slow Cooker Applesauce!)

Amish Baked Oatmeal

Ingredients

  • 3 Cups Rolled Oats
  • 3/4 Cup Brown Sugar
  • 2 Teaspoons Ground Cinnamon
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1 Cup Milk
  • 2 Eggs
  • 1/2 Cup Melted Butter
  • 2 Teaspoons Vanilla Extract
  • 3/4 Cup Dried Cranberries (Or other mix in item! Raisins, Walnuts, Blueberries, etc. It’s also yummy to omit the fruit and when serving drizzle with a little Maple Syrup!)

Instructions

  1. Preheat the oven to 350.
  2. In a large bowl mix oats, brown sugar, cinnamon, baking powder and salt.
  3. Add milk, eggs, melted butter and vanilla extract.
  4. Fold in the fruit.
  5. Spread into a 9 by 13 inch baking dish.
  6. Bake in oven for 40 minutes.
  7. If you wish, top with homemade Slow Cooker Applesauce. (Psst! This is the best way!)

Monkey Bread Recipe

Made some monkey bread for breakfast. Maybe not the healthiest but man was it good! Want the recipe? Here it is! I’ll be back later with this week’s Mom Challenge.

Mountain Man Breakfast recipe – a camping breakfast must



A few weeks ago we took a trip to Turkey Run State Park to go camping with my mom, step-dad, brother and sister. The weather was perfect – upper 70’s low 80’s, the bugs stayed away and the trails there are some of the best around. Nice and rugged just how we like them!

Ah. The ladder trail. The kid’s loved it. We hiked up the ladders which I think was much easier than if we had to hike down them!

The kids were pretty worn out by the end of the day. My little brother barely made it back to the camp site!
Of course we had to make s’mores!
It was a great couple days. Fun to get out and do stuff. Nice to hang out with family. And guess what? I didn’t have to cook! WOO HOO!!!!



Here is a recipe for a breakfast my mom made while we camping. It’s called The Mountain Man Breakfast and you make it in the dutch oven. The recipe I have says it can be made in a regular oven as well. This is a must have if you are feeding a crowd! It’s a big one!

Ingredients:
    • 1/2 pound bacon
    • 1/2 pound sage sausage, cooked and crumbled
    • 1 medium onion, diced
    • 1 2-pound bag hash brown potatoes, diced
    • 1/2 pound extra sharp cheddar cheese, grated
    • 1 dozen eggs
Prep:
Pre-heat Dutch oven, 6-9 bottom coals and 12-15 top coals. Slice bacon and onion into small pieces, and brown in the bottom of the Dutch oven until onions are clear. Stir in the hash brown potatoes and cover. Remove cover and stir occasionally to brown potatoes (15-20 minutes). Scramble the eggs in a separate container and pour the mixture over the hash browns. Cover and cook until eggs start to set (10-15 minutes). Sprinkle grated cheese over egg mixture, cover, and continue heating until eggs are completely set and cheese is melted. Slice and serve.
Or cook in a large flat baking dish 350 degrees for about 15 minutes if you are making it at home!

Sunday mornings in our house are for a few things. Sleeping in (well, for us!), church, and football. I usually make my meal plan for the week and do some laundry, but really, Sunday is our day to just chill. The last thing that I want to be doing is cooking up a storm…dirtying up 100 million dishes (ok, maybe that is a slight exaggeration) or making something super fancy that the kids are going to take one look at and say ‘Um, thanks but no thanks.’
Enter: Monkey Bread. Mmmm. A favorite in our house. Made every great once in a while because, well, it is addicting – you can’t just have one bite. And I’m not sure, but pretty positive that it’s not the healthiest thing out there.
This monkey bread recipe is so good! And super easy. And it will make your kid’s (or husband’s) day. And everyone (even the pickiest ones) eat it up. Which trust me….is a rare occurrence! When I manage to find something easy to make that everyone will eat….I hold on to it! Those recipes are like unicorns – heard of, but rarely seen. 🙂

Seriously, this monkey bread recipe makes hands down, the best monkey bread …. ever! Isn’t it pretty? Well, I guarantee you that it only sat whole like this for about 30 seconds before hands were in it, pulling it apart. And probably about 10 minutes until it was gone! Ooey and gooey, this monkey bread recipe is one of my family’s favorite and I’m sure it will become your family’s favorite too!

Monkey Bread Recipe

Ingredients

  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 2 cans (16.3 oz) of Pillsbury Grands Homestyle biscuits
  • 1 c. firmly packed brown sugar
  • 3/4 c. butter or margarine, melted

Instructions

  1. Pre-heat the oven to 350. Cut each biscuit into fourths.
  2. In a plastic bag combine the cinnamon and the sugar.
  3. Add a cup of brown sugar to the melted butter. Set aside.
  4. Add your cut up biscuits to the bag. Shake to coat.
  5. Toss in a lightly greased bundt pan.
  6. Repeat until all biscuits are in pan. Looks good already huh?
  7. Remember that brown sugar butter mixture? Pour it all over the biscuits.
  8. Bake at 350 for 28-32 minutes.
  9. I cook mine for a few extra minutes. Let cool about 5 minutes in the pan.
  10. Flip over onto a plate.
  11. Enjoy!
