Apple Pumpkin Cinnamon Rolls With Caramel Frosting Recipe
Confession. Fall is my favorite time of year. Hands down. I love the weather changing into nice in the day and perfect for hoodies in the evening. I love the bonfires (and s’mores!) that happen. Here in Indiana, fall is easily the prettiest season. The trees turn gorgeous shades of orange, red and yellow.
But it’s also time for apples. And pumpkin. And man do I love those! So consider this your warning. Expect lots of apple and pumpkin recipes to come! 🙂
Last year, I found a recipe that I really wanted to try out from Crazy For Crust. Of course, I had to put my own spin on it. I added one ESSENTIAL ingredient – pumpkin! And the result is pure amazing-ness. These are so good. I don’t dare have them for breakfast! This is for sure a delicious dessert! (Ok. Maybe I had a small leftover one for breakfast this morning…)
And the caramel frosting? YUM.
The best part? These are SO simple to make and they don’t take much time! You won’t ever want a regular cinnamon roll again!
Now you could stop with just the cinnamon rolls. Maybe add a dollop of vanilla ice cream? And you will be happy. It will be delicious. BUT. Take the 5 minutes and make the frosting. It will blow your mind! You can do it! Go for the full experience! 🙂
Ingredients
- For the Filling:
- 2 tabelspoons butter
- 2 cups diced Granny Smith Apples (about 1 1/2 medium apples, diced)
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1/3 cup canned pumpkin
- For the rolls:
- 1 tube crescent rolls (I used the large ones)
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons canned pumpkin
- For the frosting:
- 2 tablespoons butter
- 1/4 cup brown sugar
- 2-3 tablespoons heavy whipping cream, divided
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 350 F.
- In a skillet, melt 2 tbsp butter. Once it is melted add your diced apples, sugar and cinnamon. Mix and let cook for about 5 minutes.
- Add the pumpkin to the apple mixture and combine well. Let cook for about 10 minutes stirring occasionally.
- Take off the heat and let cool. Letting the mix cool is important! If you try adding the filling while it is hot, it will be harder to roll.
- Open the tube of crescent rolls and try to keep the rolls in one large rectangular piece. Once it is unrolled, press together any seams that have come apart.
- Spread a thin layer of pumpkin (you may not need all 3 tbsp) on the dough.
- Then, spread the cooled apple pumpkin mixture evenly on the dough.
- Start at one end and roll as tightly as you can.
- Once they are rolled, use a knife (serrated knife is the easiest) to cut into about 8 pieces.
- Place on a lined cookie sheet. (I lined mine with wax paper.) Bake for 11-14 minutes or until they start to get a golden brown color on the crust.
- While the cinnamon rolls are baking make your frosting! I just used the same skillet that the apple and pumpkin mixture was in.
- Add your butter and brown sugar to the skillet and let it melt. You will want to be stirring it constantly for about 2 minutes.
- Add 1 tbsp cream and stir for 30 seconds or so.
- Remove from heat and add 1 tbsp cream, vanilla and the powdered sugar. Whisk together. If needed, add the last tablespoon of cream.
- Add frosting to cinnamon rolls and enjoy!

No Bake Easy Easter Snack & Resurrection Activity For Kids
Easter is one of my favorite holidays! I love everything about it! I try to make sure that the reason behind the season isn’t lost in all the jelly beans and Easter Eggs. If you are looking for a quick and easy snack and activity to do with your children or a project for Sunday School at church this one is always a big hit!
No Bake Easy Easter Snack & Resurrection Activity For Kids
Start with a Graham Cracker and spread on some green tinted icing. Green grass is always very Easter-ish! 🙂
Then we add a doughnut to represent the tomb that Jesus was buried in.
Then we added half of a doughnut hole to represent the rock that had been moved to reveal the empty tomb. And for fun we added a toothpick with the words “He Has Risen!”.
This project is quick to hold the kiddo’s attention, a great lesson, easy for the small kids to make and fun for the big ones to want to make one too! Feel free to decorate with green coconut for grass, flower sprinkles, or fun Easter toppers!

Party Bark Treat Recipe
Want to know my go to treat for any holiday or celebration? Party bark! It’s so easy to make (it takes just minutes to put together!) and is a fun, festive touch. Plus, it’s delicious. And incredibly addicting. So if you are making for a big group make sure you double!
The ingredients are simple. M&M’s, pretzels, white chocolate and sprinkles!
Yeah. It’s really that good.
If you’ve made it this far without it disappearing – congratulations! 🙂
At this point you have 2 options. Put it out for everyone to enjoy or stick it in a jar so you can hide it. You can tell which route I like to take. 🙂
If you are looking for some fun ideas to customize:
Use holiday sprinkles (they even have themed sprinkles like butterflies, flowers, heck, they even have Spongebob sprinkles!)
Customize the M&M’s to your holiday or event (We’ve even made these as teacher gifts and made the M&M’s our school colors!) Amazon is a great place to order them! You can order all blue, yellow, green etc. You can order directly from M&M’s but it can get a little expensive!
Use food coloring to color the white chocolate.
If you are giving them as a gift you can put them in a treat bag with a colorful ribbon or even small Mason Jars. I love the jars! Print off a cute label for the tops and you have an instant adorable gift!
Or you can leave it as is. Because it looks pretty darn festive already! 🙂
Ingredients
- 12 oz of M&M; Mini’s
- 2 cups pretzels
- 16 oz white chocolate chips (1 1/2 bags)
- Sprinkles
Instructions
- Line a 9X13 baking dish with wax paper.
- Spread 3/4 cup of M&M;’s out in the baking dish.
- Crumble up the pretzels and add to the M&M;’s. You don’t want to crush them too much!
- Melt the chocolate chips. Just microwave for 30 seconds and stir until melted.
- Pour the chocolate on top of the M&M;’s and pretzel mixture.
- Top with the remaining M&M;’s and sprinkles.
- Put the dish in the refrigerator to set.
- After it has set, cut into pieces and it’s ready to serve or gift!
We first learned about this fabulous treat from Simply Staci who calls it Rainbow Bark.

Rainbow Pancakes
St. Patrick’s Day is in a few weeks. One of our favorite traditions is to make pancakes. But not just any pancakes – rainbow pancakes! They don’t take much more effort – only some extra spoons and bowls! They are really easy and kids love them!
Make your favorite pancake mix recipe (you can find my favorite pancake recipe below!) and divide it up into 6 bowls. We use paper bowls just to make clean up easier.
Using food coloring, dye your pancake mix red, orange, yellow, green, blue and purple. I suggest making small, silver dollar pancakes since you will want to stack them up to form the rainbow!
They look pretty already! Now you can top with your favorite syrup or… since no rainbow would be complete without a big, fluffy cloud add a whip cream.
Rainbow pancakes are always a hit in our house! They are such a fun surprise for the kids to wake up to! In the past we have added drops of flavoring to the different layers or we add chocolate chips inside one of the layers (because there is always chocolate covered coins at the end of the rainbow!)
Enjoy!!

Resurrection Rolls – A Fun (and Yummy) Easter Tradition
I wanted to make sure to share with you one of our favorite Easter traditions – making Resurrection Rolls! This is such a fun and yummy way to teach the Easter story! Plus, it’s so incredibly easy! 🙂
You will need:
1 package Crescent rolls (here is a coupon)
8 Marshmallows
4 tbsp melted butter
3 tbsp sugar
2 tbsp cinnamon
The How To:
Melt the butter and put the cinnamon sugar mixture in a bowl. Grease your baking pan and pre-heat the oven according to the crescent roll directions. (You can read John 19 if you would like!)
Give your child a marshmallow and explain that it represents Jesus. After Jesus died on the cross he was prepared for burial. Back then that meant using oil (the melted butter) and spices (the cinnamon sugar mixture.)
(Dip the marshmallow in butter and then roll in the cinnamon sugar mixture)
Then he was wrapped in linen cloth.
(Place the marshmallow in the crescent roll. You will need to wrap it up tightly and pinch it shut. You will want to make sure that it is sealed!)
(Place on a cookie sheet.)
Then, he was placed in a tomb (represented by the oven) and a large rock was placed to block the entrance (the oven door).
(Close the oven door and cook according to crescent roll’s package instructions)
On Sunday morning, the third day, Mary Magdalene and several other women went to the tomb. When they arrived, they found the tomb had been opened already. When they went in, they did not find Jesus’ body and the wondered what had happened.
Suddenly, two angels appeared. The women were terrified, but the angels said to them, “Why do you look for the living among the dead? He is not here; He has risen! Remember how He told you that He would be turned over to sinful men, be crucified, and rise again on the third day!”
The women ran back to tell Jesus’ apostles what they had seen. Peter and one of the other apostles went to the tomb to see for themselves. They looked in and saw the linen cloths that Jesus’ body had been wrapped in but nothing else.
(Open your roll! Jesus – represented by the marshmallow – is not there! He has risen! All that is left are the linens he was wrapped in – the roll.)
We do this every year and it never gets old! It’s such a fun way to bring the Bible alive and really helps kids understand the Easter Story!

Candy Filled Cupcakes – Perfect for all of that leftover Halloween Candy
So I’m sure most of you have had lots of candy. And sometimes you think — what are we going to do with all of this candy. Have no fear. Make cupcakes! {I know because you need MORE sugar added, right?}
Ingredients
- 1 1/4 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1 large egg yolk
- 1 cup sugar
- 1/2 cup canola oil
- 1 tsp vanilla extract (I used 1 tbsp — I love vanilla)
- 1/2 cup sour cream
- Candy of your choice! I used chocolate covered pretzels, 3 Musketeers, M&M;’s, Twix, Kit Kat, Snickers, Milky Way and Dark Milky Way
Instructions
- Mix dry ingredients. Set aside.
- Use electric mixer and beat egg and yolk and sugar about 2 1/2 minutes. It will be thick and cream colored. *Do not under mix! It lightens the texture!
- Mix in oil and vanilla until blended. Mix in sour cream until no white streaks are left.
- Add flour mix.
- Fill cupcake pan half full. (A little neater than mine!) 🙂
- Pick out your candy!
- Place candy in cupcake.
- Fill back up.
- Bake at 375 for about 16-18 minutes.
- Cool and frost.
Ingredients
- 2 1/2 cups butter
- 5 cups powdered sugar
- 1 tbsp vanilla
- 2 1/2 tbsp milk
Instructions
- Beat butter.
- Add powdered sugar.
- Beat.
- Add vanilla and 1 tbsp milk.
- Beat.
- Add more milk as necessary.
- This makes a big batch!
