4 Ingredient Cranberry Brie Bites Appetizer – Easy, Fancy & Delicious

Thanksgiving is IN A FEW DAYS y’all. I can’t believe it. I’m working over here on finalizing our menu (because I do it a few days in advance and definitely am not organized anytime before then…) I can tell you that these cranberry brie bites WILL BE ON THEM! Why? Because I’m a fan of several things. And this appetizer brings A LOT of those things together.

I’m all for easy things o make. Everyone knows that Dustin is the cook in our home. But even I can whip these cranberry brie bites up in a flash. Best yet, every time I make them or take them somewhere people ALWAYS say ‘Oh my gosh, these look good! So fancy!’

I don’t laugh because it’s not true! They are fancy. I laugh because they are SO stinking simple. Seriously, 4 ingredients and just a few minutes. Slice, drop and bake. And here I am looking like a fancy schmancy Suzy Homemaker. That my friends….is comical.

Pitch ins, company dinners, Thanksgiving, Christmas….a random Wednesday night dinner…these cranberry brie bites are good ANYTIME.

You can make them in a regular muffin tin for 12 larger ‘bites’ or if you want a true bite size appetizer, use a mini muffin tin.

Cranberry Brie Bites are the perfect appetizer. They are super delicious, fancy but insanely easy! Plus, they only have 4 ingredients!

Ingredients

Servings: large bites

Instructions
  1. Lightly flour a counter top.

  2. Roll out a sheet of crescent dough. If you can’t find the whole sheets, you can use the crescent rolls, just pinch the perforated lines to make them whole.

  3. Using a knife or pizza cutter, slice into 12 pieces. If using a mini muffin tin for tiny bites, cut the dough into 24 pieces.

  4. Spray a muffin tin with cooking spray. Put each square of dough into the pan making sure that it forms a bit of a bowl.

  5. Next, slice your cheese into 12 pieces. I cut the rind of mine, but you can leave it on if you wish. It is edible and a bit of personal preference! If using the mini pan, cut each slice in half.

  6. Add one slice of cheese into each dough ‘bowl’.

  7. Open a can of whole cranberry sauce. Spoon some on top of each piece of cheese.

  8. Lastly, lay a bit of fresh rosemary on top of each one.

  9. Bake in the oven at 375 for 12-15 minutes.

  10. Serve warm.

Holidays have a tendency of getting away from you sometimes. There always seems like there are two hundred things to do, but only time to do about fifty of them. Long story short…we are busy. And I know if I’m busy in my home, then you are busy too! But one thing that we like to make sure of no matter how busy we are is that everyone is eating a good breakfast and we have a little bit of time to spend it as a family.

No matter if that means breakfast is sitting at the table together or if we are grabbing a breakfast to go as we race to cross off things on our to do list for the day. Eating together is important for me. Which means that I need yummy food that I can serve my family.

Christmas Time Bucket List

This is one of my favorite times of the year! But it is super easy to get so wrapped up in the hustle and bustle of everything and forget to stop and enjoy it. I caught myself just this year talking to a friend and she asked what I was doing over the weekend. I replied as “Oh my gosh we are so busy. I’ve got to run here and there. We have a birthday party. I need to get caught up on the laundry. And I HAVE to get the tree up and decorated. UGH. I haven’t even started….”

That used to be one of my favorite things to do! It’s not an ugh. It’s just a busy time. I decided right then and there that we were going to slow down a bit and enjoy the Christmas time season. When I started thinking about all the ways to enjoy it, I realized that we will be as busy as ever, but now it’s not an UGH so much we have to do…it’s a YES there is so much we get to do!

Just because we are busy doesn’t mean we can’t make our lives easier! One of my tips is to shop at places that you can pick up everything you need under one roof. And one of my favorite places to shop is Dollar General! One thing that we do to make the holidays a little less stressful is to wrap gifts BEFORE Christmas Eve. (No more staying up late!) We’ve turned our pizza night into gift wrap nights! It’s actually a lot of fun and something we look forward to. (We do it a few times during the month!) First I grab a quick pizza like DIGIORNO® RISING CRUST® Pizza (don’t forget your coupon!)

I try to teach my son lots of things like math and manners. I try to teach him that some days a good book and a cup of hot cocoa are just what you need and that a little work never hurt anybody. While I was at Walmart picking up a few 2-Liters of Coca-Cola and Diet Coca-Cola (my fave!) I decided to pick up a few other items for Josh to create his own little project. We like to serve Thanksgiving dinner at a local shelter and when I heard the phrase “Layer On Love” it made me think of a previous year when I was told that the shelter desperately needed warm socks. Indiana gets really cold in the winter and unfortunately several of the shoes that the men in the shelter wear have holes in them, are canvas or are thin from wear. Snow, slush, and sleet all creep inside their shoes and there is nothing worse than cold wet socks. We are so excited to donate coats to One Warm Coat and know that we are keeping people warm all the way down to their toes with our socks! 🙂

Easy Service Project For Kids

This year when we go to serve our Turkey Day dinner we will be bring our own Love Packs. I knew Joshua would be excited about this project! We came home, got our supplies, poured a big glass of Coca-Cola and got to work stuffing bags with socks, snacks and toiletries to bring with us. This is an amazing project that you can do with your kids! Joshua is 13 and he loved picking out items for the bags as well as packing them up himself. It’s a perfect way to get the conversation of giving started! Whether you make 2 bags or 200, they are sure to be appreciated!

DIY Instagram Coasters – Perfect Gift Idea!

This project is inexpensive, quick and really, really, really easy. In fact, the hardest part is picking out your favorite photos! My younger brother recently took a trip to England with his college. I’m guilty of not printing out my photos as often as I should. I have photos saved on phones, Instagram accounts, and on memory cards still loaded in the camera. And I know that if I have stored photos that my brother definitely has some stored photos! So I really wanted to get some in a place that he can show them off, help remember his trip and have something useful. (You know, to help protect all of that really nice, garage sale and taken from your mom’s basement college furniture…) 🙂

So you only need a few supplies – tile coasters, furniture pads, Mod Podge and a foam brush. Oh and an awesome printer!

Apply a thin layer of Mod Podge directly to the coaster.

Add your photos and let dry. Gosh, don’t the photos look great? I know as soon as he opens them, he’s going to instantly recognize the photos as ones he took on his trip!

Add a layer of Mod Podge on top of the photos and let dry. This will help seal the photos and make sure that the ink doesn’t bleed from condensation from the glasses.

I was so thrilled with how the coasters for my brother turned out that I couldn’t wait to show them to my friend when she came over later that night. She loved them too and wanted to make a set for herself! She said her printer wasn’t nearly as good as my printer so she printed her photos that day from my house. 3 Ways To Make Holiday Shopping Simple

The stockings were hung by the chimney with care…and the kiddos keep coming up to check to see if somehow something has been dropped off early!  Sound familiar?  While the holidays are about so much more than just getting presents, finding those perfect gifts to give is one of my favorites.  I love to pick it out, the anticipation before they open it and the look on their face when they see the gift for the first time.  But holiday shopping can get stressful if you go in without a game plan.  Here are 3 tips to make your gift giving be stress free and easy!

Make a List

If it were up to me I would have gifts for not only my family, but also for our extended family, our neighbors, teachers (and geesh we have a lot of teachers!), our mailman, and gifts to donate.  I feel like I’m Oprah.  Gifts for everybody!!

However that’s not really realistic.  Actually, that’s not realistic at all.  So start with a list.  My lists have 3 columns.  In the first column, I write down everyone I would like to give a gift to.  In the next column, I write my budget for that person. And in the third column, I write down any gifts that were requested or ideas I have.

While I want to give a gift to everyone, I don’t want to go into debt with the holiday season either.  When I sat down and thought about why I want to give a gift to, say our mailman, it’s because I want them to know I appreciate them.  While I would love for them to reach into the mailbox and find the keys to their BRAND NEW CAR (sorry, I’m still channeling my inner Oprah…), what I really want them to see is that I care.  A nice, thoughtful thank-you card can go a long way.  If you still want to give something, try homemade cookies, a loaf of banana bread or a $5 gift card to let them know that coffee is on you next time.  Gifts don’t have to be expensive.  People will be happy just by you telling them how much you appreciate them!

Don’t Buy Stuff Just To Buy Stuff

When I was younger, my grandparents had a big huge tree.  Every year there were hundreds of gifts underneath the tree.  One year they had to move the tree into the study.  My Grandmother may have gone a bit overboard that year, because when we opened the pocket doors to the room, gifts just tumbled out.  We still had to open some of our gifts in the living room, because you couldn’t even get into the study!  I’m sure when my Grandfather saw it he saw dollar signs, but as a small child it was like something out of the movies.

As an adult, I want my child to wake up Christmas morning and see that YES, Santa has arrived.  My son has never been a big toy child though.  Every year I would buy things and they would go unopened or un-played with.  Finally, I got smart and stopped buying stuff for the sake of buying stuff.  I will admit, at first I was a little anxious about it – our tree looked a little more bare than previous years, but my wallet was thankful.  And honestly, I think my son was happier, too.  He got exactly what he wanted and got to get to playing!  Don’t waste your time or money on items that aren’t going to get used.  This year, be sure you are shopping intentionally.

Random Acts of Kindness This Holiday Season #SpreadCheer

The holiday season is one of my favorites. It seems like people’s attitudes just begin to change and the Christmas spirit begins to take over. I try really hard to instill the love of giving all year around to my son, but during the holidays it’s a great excuse to kick it into overdrive with extra random acts of kindness.

Josh is getting older (bare with me for my pity party for a second…) and some of our Christmas traditions we used to do, he now says he’s too big for. (BOO!!!) I tried to explain to him you are never to old for Christmas and he still does most of our traditions like going to go look at lights, decorating the tree, and watching all of the Christmas movies (and even though he may say some are ‘baby shows’ he totally doesn’t want to miss them!). But some of our traditions like visiting Santa or writing a letter and sending it to the North Pole have been a no-go. (I’m sobbing now…) As sad as I am, the good news that just means we can make new traditions! And this year we’ve decided on small random acts of kindness throughout the month. He may almost be a teenager be getting older (I can’t bring myself to say the ‘T-word’ yet!), but that doesn’t mean we can’t make Christmas magical! Now, I am just teaching him a different kind of Christmas magic.

Random Acts Of Kindness Ideas For Kids:

  • Adopt a family – Contact your child’s school to find a family in need. Many stores also have trees set up where you can adopt a child’s wishlist item and donate it in store.
  • Don’t forget about seniors! Bring in treats, sing Christmas carols or small gifts to a local nursing home. You can also find out if there are any seniors who don’t have any family close by to see if you can bring them some extra cheer!
  • Animal shelters are a fun place to donate to. Plus, while you are there the dogs and cats are pretty excited about some cuddle time.
  • If your kids are older, have them organize a kids night! With your help, they can entertain kids (think Christmas movies, popcorn, etc) while their parents get some Christmas shopping done.
  • Serve a meal in a homeless shelter. While you are there you can drop off some cold weather essentials like coats, blankets and socks.

Green Christmas Idea: Recycled Rudolph Wrapping Paper

Christmas and green seem to go hand in hand. Green Christmas trees stand proudly in our living rooms, greenery twists down the banisters of our stairs, and green wreaths hang on doors to welcome friends and family to our home. But Christmas and being eco-friendly can go hand in hand too!

Need some examples?

  • Set your Christmas tree lights on a timer. No need to waste electricity here!

Did you know that most gift wrap can’t be recycled? Lots of wrapping paper is thin and doesn’t have many fibers making it easy to recycle and some has glitter, plastics and other non-paper materials added to them. Sure you can buy recycled gift wrap, but even better use what you have at home! This super cute Rudolph wrapping paper idea is simple, easy and a great way to recycle. Even better, just pull off the pom pom and it is 100% recyclable!

This project is super simple and really doesn’t take any longer than wrapping with traditional wrapping paper and adding all of the ribbons and bows! Plus, I kind of like the thought of having a bunch of Rudolphs under the tree!

You will need:

  • Brown Paper Bags
  • Scissors
  • Brown Construction Paper
  • Black Marker
  • Red Pom Poms
  • Glue
  • Tape

Cut your brown paper bag down the side. Then open it up and remove the bottom of the bag so it will lay flat. If your bag has handles, trim those away too. Recycle your scraps!
