Cheesy Sausage Egg & Veggie Breakfast Ring Recipe

Breakfast is a big deal in our house. Like a really big deal. We love it all – pancakes, waffles, eggs, french toast….and of course sausage! While we try to have a good breakfast every morning, on holidays and birthdays we try to do something a little special. Sometimes, even on weekends or days off, mornings are still hectic. Especially when you throw in the excitement of things like Easter baskets! This recipe is super simple to put together and while it is baking it gives you a chance to get out of the kitchen and be with your family! Another bonus: It looks so pretty on a plate for your holiday brunch! Oh and an even bigger bonus is that the clean up is SO simple. Seriously, 5 minutes and clean up is done! WOO HOO!

This is quickly becoming one of our favorite recipes, but I think it is perfect for spring and Easter because not only for the reasons above, but it also kind of looks like a nest! It doesn’t get more spring than that! 🙂

Cheesy Sausage Egg & Veggie Breakfast Ring Recipe

To make it, you honestly probably have everything in your refrigerator now! I like to use Odom’s Tennessee Pride® Country Sausage. You can find it at Walmart! We usually get two rolls (the mild and hot) and make them both to get a nice mix in our breakfast rings. And the next morning we use the leftovers for a big batch of biscuits and gravy! YUM!

Besides sausage, you will need eggs, cheese, crescent rolls and if you are like me, veggies! I love tomato and green pepper in mine! But really, you can add anything to yours – mushrooms, onions, or whatever your family likes!

This cheesy egg, sausage and veggie ring is the perfect breakfast! Yummy and so easy to make!

Ingredients

Instructions
  1. Preheat your oven to 375.

  2. In a small saucepan, cook the sausage and drain. Remove and put in a small bowl to cool.

  3. Wipe out the excess grease of your pan and add your 5 eggs and scramble. Remove from pan and set aside.

  4. Cover a baking sheet with parchment paper. Open the crescent rolls and make a star pattern. You will want to overlap the edges and they should be pretty tight together.

  5. Begin to layer your ingredients on the crescent rolls. I start with a little cheese and then add the sausage.

  6. Add the scrambled eggs and veggies.

  7. Top with more cheese!

  8. Fold the crescent ends towards the middle of the ring.

  9. It will look like the fillings aren’t fully covered with the dough and that’s ok!

  10. Beat an egg in a small dish and brush over the crescents. This is optional, but it really gives the ring a nice color to it!

  11. Bake at 375 for about 20 minutes or until golden brown.

  12. Slice into wedges and serve!

My Mom always made the ‘lambie cake’ for Easter every year. She has this cake mold shaped like a lamb and she always decorated it up to look so cute every year. I’m not that ambitious but I love a sweet treat for the kids and we have fun filling and hiding baskets and eggs. I think I get a bigger kick out of finding good hiding spots than they do out of finding them!

Easter was always one of my favorite holidays growing up. My dad would always buy about 10 large chocolate bunnies and hide them around our living room. (Why so many? So he could eat them, too! Haha) After we had our 9am chocolate fix, we’d head to church and then to my grandparent’s house for turkey dinner with all the fixings. Every year it was the same and I loved it. We always had Easter Egg hunts at my grandma and papaw’s house when I was little. Now that I have my own family, we still get together every year with our big ole’ family and let the littles hunt eggs. They always have such a great time. 15. Add a puzzle piece….

This is one of my favorite ideas! Usually at our house the kids get their eggs, dump them and count up their candy. Then the parents go through counting eggs (usually two or three times) to make sure we don’t have eggs that get stranded outside. While you are filling up the eggs but one puzzle piece in each egg. Then, once the kids find the eggs they can take the puzzle pieces out and put the puzzle together. If the puzzle is complete, they have found all the eggs!

Creamy Macaroni and Cheese

There isn’t much that I like better than a plate full of gooey, creamy macaroni and cheese. It’s the ultimate comfort food. And Josh has grown up to be just as big of a macaroni fan as I am. Now over the years we have made many different kinds of macaroni and cheese. Sometimes we get a little fancy and use smoked cheddars and Gouda. Sometimes we make it in our slow cooker. And today, we’ve made some with yogurt. Yes, yogurt!

I’ve been on a bit of a yogurt kick lately. Remember when we added it to our waffles? YUM! Well, we’ve done it again, this time just with our macaroni and cheese! The results?

This is totally a keeper. Beyond creamy. Beyond gooey. And most importantly, beyond cheesy. I don’t know about your house, but it doesn’t really matter what holiday mean it is….macaroni and cheese ALWAYS has a spot at our holiday table! Thanksgiving? It goes with turkey! Christmas…you can find the mac and cheese right next to the ham. 4th of July? Awesome with BBQ! Every single holiday…it’s always there! This recipe is awesome not just because it’s so delicious, but because it makes a lot. It’s perfect for feeding a crowd.

(Tip: After we made ours the other night, I put it in our refrigerator for a little while to really ‘set’. Then, I was able to cut it easily into individual slices and I put each slice on a sheet of wax paper and vacuum sealed it a bit – just be careful not to smoosh it! Pop it into the freezer and ta da! We’ve got individual homemade frozen sides/dinners for super busy nights!)

Yogurt Waffles

Before the recipe – just a little bit about the yogurt. I used Dannon All Natural Yogurt. You should always have a container of this in your refrigerator! Not only is it super good on it’s own or with some toppings (like fresh fruit!) but you can use it as a substitute in so many different recipes! I get mine at Meijer because it’s my favorite place to grocery shop! (Get the M-Perks app!)

We get our favorite comfort food … and with the addition of yogurt! This recipe was originally from my Grandmother, but hers called for a lot more whipping cream and butter. (That must be why it was so good!) Using the comfort we really eliminated most of that! I’m all for substitutions! I can’t wait to bring my family’s favorite macaroni and cheese recipe to our holiday dinner…with my new little twist!

Ingredients

  1. Preheat the oven to 425. Boil the pasta and cook according to package’s instructions.

  2. In a large sauce pan, melt the butter. Once melted, whisk in the flour. Let cook for about 30 seconds.

  3. Add the milk, heavy cream and Dannon All Natural Yogurt. Whisk together and bring to a simmer.

  4. Add in the dry mustard, onion powder and salt and pepper.

  5. Turn down the heat and add the parmesan, cheddar cheese and soup. Stir until melted.

  6. Mix together the cooked noodles and cheese mixture.

  7. Transfer to a baking dish that has been prepped with non-stick spray. Top with crushed butter crackers.

Yogurt Waffles – The Yummiest Waffle Recipe!

If you were to ask my family what their favorite breakfast was, they would easily say waffles. I don’t even have to think about it! We are constantly coming up with new waffle ideas – apple butter waffles, waffles with bacon in them, chocolate chip waffles…even brownie waffles! To say that our waffle maker was one of the best investments we have made in the kitchen is definitely an understatement!

The other day I was picking up some things at Meijer (I love that place!) and it totally hit me! Why don’t I put yogurt in our waffles? What a great way to get this carb-licious breakfast a bit of a protein boost!

I decided to use Dannon All Natural yogurt in my waffles. This is a plain yogurt made with all natural ingredients. It comes in a larger size than a traditional yogurt snack would come in, which is awesome because this is an awesome substitute for things like sour cream, cream cheese, mayonnaise and so much more! I try to always have a container of this in my refrigerator! Plus, it’s good in a bowl by itself. 😉

The awesome thing about this recipe is that you can totally use other kinds of yogurts as well! Dannon has a Whole Milk Yogurt that is GMO free, lower sugar and comes in a variety of flavors. And of course there are always the Dannon Classics. So get crazy! Add a little mixed berry, vanilla or peach to your waffles! Yum!

We like to top our waffles with syrup of course, but also a dollop of yogurt. You know, because it’s amazing! Did you know that just one cup of yogurt is packed with protein, calcium and vitamin D? It’s a great way to start your morning to help you fuel through your day and give you the energy you need.

  1. Plug your waffle maker in and let it warm up.

  2. In a bowl add eggs, milk and Dannon Yogurt together. (If you would like you can add a teaspoon of vanilla too!)

  4. Add the sugar, flour, baking powder and salt.

  5. Whisk together. I let my mix sit for a few minutes. You will notice it get a little bubbly. I’ll be honest, I’m not 100% sure if this is necessary! My grandmother always told me to let it sit, so I’ve always let it sit! Never question Grandma’s cooking techniques! 😉

  6. Spray your waffle iron with nonstick spray and scoop out some waffle mix. Cook until each side is a golden brown – usually only about 3 minutes per side, depending on how well done you like it (my son likes his nice and crispy!) and how hot your waffle iron runs.

  7. Top with your favorite toppings and enjoy!

Happy fall y’all! We’ve been super busy around here enjoying everything fall has to offer and just being outside! And inside, we’ve been busy cooking up all of our fall favorites!

Do you follow our slow cooker website? If so, then you know that we recently made the most amazing slow cooker apple butter. While I’ve been dousing my bagels with it and making my famous Apple Butter Banana Bread, I had one more recipe I wanted to use our homemade apple butter for.

I saved this recipe from Sugar Dish Me last year and I have been looking forward to making it for a while now. I’m honestly not sure why I waited almost a year, but I did and to be honest, now I’m a little sad that I’ve missed out on a year of apple butter waffles. Don’t feel too badly for me though, I see us more than making up for it!

These apple butter waffles are perfect – slightly crisp on the outside and nice and fluffy on the inside. My favorite! We topped ours with cinnamon syrup, whipped cream and a dash of cinnamon. SO good!

Warning: You will end up making waffles for breakfast and even dinner …. a lot! You just won’t be able to get enough!

Cinnamon Syrup


Servings: waffles

Instructions
  1. In a bowl, mix the flour, baking powder, sugar and salt.

  2. In a separate bowl, mix the milk, apple butter, eggs, and vegetable oil.

  3. Add your wet ingredients to your dry ingredients mixing well.

  4. Plug in your waffle maker and allow the mixture to sit while the waffle iron heats. Cook your waffles to desired crispness. I cooked mine for about 3 minutes each side.

  5. For the syrup: In a small saucepan, combine the brown sugar and cinnamon. In a small bowl or measuring cup, mix the cornstarch and water. Pour into the brown sugar mixture, combine and bring to a simmer. Stir until the brown sugar dissolves. Remove from heat and add the butter and vanilla extract.

We are getting into one of my favorite times of the year! I am a HUUUUGE fan of Halloween – but the cute, not the creepy! It may only be August (well, it’s practical September now!), but Joshua already has his costume picked out. At first he didn’t want to dress up. He thinks he is too old to go trick or treating (begin the violins because I’m totally crying over here), but once he saw this ‘costume’ he changed his mind. Well, at least about the dressing up part.

I may need to bribe him with a batch of these cookies & cream cookies. They were that good. Total bribe material. Filled with Oreos and white chocolate these cookies are the perfect mix. I’m not an awesome cake/cookie/cupcake decorator, but these are so simple that even I can decorate them.

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper or use non-stick spray. We like giant cookies so we used a whoopie-pie pan.

  2. In a bowl, mix together butter, brown sugar, sugar, eggs, and vanilla.

  3. In a second bowl, mix flour, baking soda, baking powder and salt.

  4. Add the dry ingredients to the wet ingredients and combine.

  5. In a sandwich bag, crush the Oreos. You don’t want them to be finely crushed, you want to have chunks of Oreo in your cookies!

  6. Add the Oreos and the white chocolate chips to the batter and mix well.

  7. You will want the cookies to be large enough to hold an Oreo spider. We used a whoopie-pie pan on one batch and the other we used a large ice cream scoop.

  8. Bake for 8-10 minutes or until they just begin to brown. Let them cool completely on the cookie sheet.

  9. Once the cookies are cool, use the decorating gel to ‘glue’ on an Oreo to the center of each cookie.

  10. Add a dot of decorating gel to the back of each of the candy eyes and stick it into place. And 8 gel spider legs finish your cookie.

  11. Let the cookies sit and the decorating gel will harden.

As a busy mom, I am always looking for new recipes that I can make in a flash and that everyone will eat without complaint. During back to school time, this is super-duper true. I need quick and easy meals — for breakfast and dinner so that I can accomplish everything that needs to be done before bedtime.

For us in the breakfast we like to grab a Jimmy Dean® breakfast sandwich. My kid’s favorite is the Croissant Sausage Egg Cheese. It doesn’t get quicker or easier than this! And they get gobbled up. We don’t just have them for breakfast; sometimes Joshua will come home and fix one for a snack too.2

TIP: Want a fun way to serve fruit? Make ‘kabobs’ with fun paper straws. The kids love the festive look and let’s face it. It’s much more fun to eat this way!

When it comes time for dinner, I like to make a homemade dish….with some pre-made help. Just like our Chicken Parmesan Stuffed Shells.

  1. Cook the pasta according to package directions. Cut the chicken into bite size pieces.

  2. Lightly cover the bottom of a baking dish with a layer of marinara sauce.

  3. In a bowl, mix ricotta, egg and Parmesan.

  4. Once the pasta is cooked, drain and rinse with cold water to cool down.

  5. Fill the pasta shell with cheese mixture and chicken. Place in baking dish.

  6. Top the shells with Parmesan cheese.

  7. Add half a bag of Mozzarella cheese.

  10. Cook at 375 for 45 minutes.

One thing that I know that I have in common with just about every other mother and father out there is this: we are busy! Between kids, work, and for us, homeschooling, that enough is plenty to keep me on my toes. But I totally have a confession for you.

I hate to cook. Actually, I don’t hate to cook. I don’t mind cooking. But, I hate cleaning up after cooking. I don’t know, apparently I have problems with chores that must be done in steps. Kind of like getting the clean, folded clothes from the laundry basket and hung in the closet. It’s a struggle for me. (Don’t judge!)

That’s part of the reasons I love my slow cooker so much! It’s easy clean up! Not to mention I don’t have to stand there and actually do the cooking. I’m busy y’all. I’m busy! 🙂 So today I’m sharing with you our favorite slow cooker chicken pot pie recipe. It’s so easy and so delicious.

I use the Lime scented (it has baking soda in it, which if you didn’t know is my secret weapon for getting burnt pans clean!). I’m getting a tad obsessed because while we were at Meijer yesterday I bought not only another lime, but they had a grapefruit and baking soda one too! My kids must think they smell good too because they make sure that we never run out of dirty dishes to use them on! 😉

  1. In your slow cooker, add 4 boneless skinless chicken breasts. (I put mine in frozen but fresh works perfectly as well!) Season with onion powder, salt, pepper and poultry seasoning.

  2. Cover with two cans of cream of chicken soup.

  3. Add the potatoes. Cover and cook on high for 4-5 hours or low for 7-8 hours.

  4. Remove the chicken and shred with a fork. It will be really easy to shred – the chicken should be nice and tender!

  5. Add the cream, parmesan cheese and bag of mixed vegetables. Mix, cover and let cook until ready to be served.

  6. Bake the biscuits as the directions indicate.

  7. Serve the pot pie mix over the biscuits.

Now, the secret to serving this is to layer your biscuits and pot pie filling. I cut our biscuits in half, putting the bottom half in the bowl first. Add some pot pie mix and then add the top half of the biscuit. Then top with some more filling. And of course, top with another biscuit half! It’s like a lasagna….but only with chicken pot pie.

My family gobbles this meal up. And the leftovers are awesome! You know how sometimes leftovers just aren’t near as good as when you had them the night before? That’s totally not the case with this!
