Slow Cooker Chicken Pot Pie

One thing that I know that I have in common with just about every other mother and father out there is this: we are busy! Between kids, work, and for us, homeschooling, that enough is plenty to keep me on my toes. But I totally have a confession for you.

I hate to cook. Actually, I don’t hate to cook. I don’t mind cooking. But, I hate cleaning up after cooking. I don’t know, apparently I have problems with chores that must be done in steps. Kind of like getting the clean, folded clothes from the laundry basket and hung in the closet. It’s a struggle for me. (Don’t judge!)

That’s part of the reasons I love my slow cooker so much! It’s easy clean up! Not to mention I don’t have to stand there and actually do the cooking. I’m busy y’all. I’m busy! 🙂 So today I’m sharing with you our favorite slow cooker chicken pot pie recipe. It’s so easy and so delicious.

By the way, for clean up I totally recommend Palmolive Fusion Clean. They are tough on getting food, gunk and grease off your dishes and they smell AMAZING.

I use the Lime scented (it has baking soda in it, which if you didn’t know is my secret weapon for getting burnt pans clean!). I’m getting a tad obsessed because while we were at Meijer yesterday I bought not only another lime, but they had a grapefruit and baking soda one too! My kids must think they smell good too because they make sure that we never run out of dirty dishes to use them on! 😉

Super simple to make, this slow cooker chicken pot pie will quickly become a family favorite!
Ingredients

  • 4


    boneless skinless chicken breasts

  • 2 cans


    Meijer cream of chicken soup



  • onion powder



  • salt & pepper



  • poultry seasoning

  • 3


    Potatoes washed, peeled (optional) and cut into bite size cubes

  • 1/2 cup


    heavy cream

  • 1/4 cup


    Parmesan cheese

  • 1 bag


    Meijer mixed vegetables

  • 1 can


    Meijer refrigerated biscuits

Servings:
Instructions
  1. In your slow cooker, add 4 boneless skinless chicken breasts. (I put mine in frozen but fresh works perfectly as well!) Season with onion powder, salt, pepper and poultry seasoning.
  2. Cover with two cans of cream of chicken soup.
  3. Add the potatoes. Cover and cook on high for 4-5 hours or low for 7-8 hours.
  4. Remove the chicken and shred with a fork. It will be really easy to shred – the chicken should be nice and tender!
  5. Add the cream, parmesan cheese and bag of mixed vegetables. Mix, cover and let cook until ready to be served.
  6. Bake the biscuits as the directions indicate.
  7. Serve the pot pie mix over the biscuits.
  8. Clean up using Palmolive Fusion Clean.

Now, the secret to serving this is to layer your biscuits and pot pie filling. I cut our biscuits in half, putting the bottom half in the bowl first. Add some pot pie mix and then add the top half of the biscuit. Then top with some more filling. And of course, top with another biscuit half! It’s like a lasagna….but only with chicken pot pie.

My family gobbles this meal up. And the leftovers are awesome! You know how sometimes leftovers just aren’t near as good as when you had them the night before? That’s totally not the case with this!

I’m such a huge fan of easy dinners. That’s why I love my slow cooker so much! Josh has started with wrestling and we are busy with the holidays, choir practice, and you know, that whole drill. Basically, it’s been busy. Well, busier than normal.

So my slow cooker has made itself a permanent home on my counter top the past few weeks. It’s been so nice to have something ready when we get back. Not to mention, my house smells so good when I walk in the front door! The other night Joshua had his Holiday Choir Concert and so I really wanted to do something easy for dinner.

When I was at Kroger, I noticed in the freezer section that they had packages of Tyson® Premium Cornish Hens. I’ve never made them in the slow cooker, but I thought that they would make the perfect after concert dinner. Normally I roast a chicken, but that’s a lot of food for just two people! So I really like the idea of buying a pack of Tyson® Premium Cornish Hens! In fact, I’m not sure why it took me so long to to start buying them!

I did a simple (but so tasty!) seasoned hen in the slow cooker and served it on top of wild rice. It was so amazing! And Joshua thought it was pretty awesome that he got a whole hen all to himself. He’s 12 and eats more than I’ve ever seen someone eat before!

While this dinner was super easy (even for a weeknight dinner!) it is still a great idea for a holiday dinner. Two hens will fit nicely in your slow cooker, so if you have a small family like us it’s a perfect way to have a fancy dinner without having to buy a 12 – 15 pound piece of meat!

Ingredients

  • 2


    Tyson Premium Cornish Hens

  • 3 tbsp


    Paprika

  • 4 tbsp


    salt

  • 1 tsp


    onion powder

  • 1 1/2 tbsp


    Savory

  • 1 tsp


    pepper

  • 3/4 tsp


    Cayenne Pepper

  • 1/2 tsp


    garlic powder

  1. Let your Tyson Premium Cornish Hens thaw the night before. Open your package and pat your birds dry with paper towels.
  2. In a bowl, mix all of the seasonings together.
  3. Cover the bird with your seasoning mix. I sprinkle some inside the hens too.
  4. Tear 6 pieces of aluminum foil. Crunch the foil into balls and place in your slow cooker.
  5. Place your Tyson Premium Cornish Hens on top of the foil. Cover and cook for 4-6 hours on high or about 8 hours on low.

I don’t know about you, but around our house mornings are a bit stressful. Getting up, getting dressed, making sure faces are washed, teeth brush, dogs walked and to grab books before rushing out to school. That doesn’t even begin to cover breakfast! Making it, letting it cool, and making sure that the half asleep child eats it quick enough to escape out to the bus stop on time.

But after school can sometimes be just as crazy. I’m trying to make dinner. Homework needs done, the dogs need walked (again), and Josh wants to play. Not to mention Josh wants to eat! He’s hungry!

We need things that are easy to make for busy families! One thing that I love making is my easy slow cooker applesauce. It just takes a few minutes to prep and it’s seriously a dump and forget recipe. I pour mine into little containers that are perfect for pairing with an easy breakfast (like HOT POCKETS (R) Breakfast Bites!), tossing in a lunch box or even to go with a snack (like HOT POCKETS (R) Snack Bites!) With a hungry tween in the house, I’m all for easy recipes and food to have on hand when his hunger strikes. Which, let me tell you, is a lot!

Ingredients

  • 8-10


    Apples

  • 1/2 cup


    brown sugar

  • 1/2 cup


    water

  • 1 tbsp


    cinnamon

Servings:
Instructions
  1. Peel your apples. Then slice them into bite size pieces.
  2. Dump the apples, brown sugar, water and cinnamon into your slow cooker.
  3. Combine the ingredients.
  4. Cook on high for 4-6 hours or medium for 7-8 hours. (I give mine a stir about halfway through.)
  5. If you like a chunkier applesauce, use a potato masher and mash directly in the slow cooker. If you prefer a smooth applesauce, blend for a few seconds. Allow to cool.

Slow Cooker Chicken Teriyaki Dinner

Sometimes I feel like the busiest time of the day is between 5:00 – 8:00. Everyone is getting home from work, kids are doing (or avoiding) homework, starting a load of laundry, not to mention getting dinner started. In case you haven’t learned yet – I love my slow cooker. It makes dinner time so much easier and clean up is a breeze! (It’s even easier when you use slow cooker liners!)

Last night was no exception with scouts and oh yeah, a school project that is due tomorrow. I was really glad that I had planned on a slow cooker dinner! We needed all the time we could get. This slow cooker chicken teriyaki recipe was so good! It’s definitely one we will make again! You can get the recipe on our new website – Easy Slow Cooker Meals!

Amish Baked Oatmeal with Slow Cooker Applesauce

One of my favorite breakfast dishes that I make anytime there is a breakfast pitch-in is Amish Baked Oatmeal. Every time I bring it people request the recipe.

It’s easy to customize! You can add in fruit like I did, but I’ve also made it without and later topped it with banana slices and a little maple syrup. Today I am going to share with you my favorite way to eat it.

That’s right! Amish Baked Oatmeal Topped with Slow Cooker Applesauce. Say it with me. Mmmmm….. 🙂

 

The ingredients are simple.

Prep takes just about 5 minutes.

And when it comes out of the oven it’s like a yummy, baked granola. (Which just happens to be how I like my oatmeal!)

Eat it plain, drizzle a little Maple Syrup on it or

 

Top it with something delicious! (Like Slow Cooker Applesauce!)

This is sure to become a favorite recipe!

Amish Baked Oatmeal

Ingredients

  • 3 Cups Rolled Oats
  • 3/4 Cup Brown Sugar
  • 2 Teaspoons Ground Cinnamon
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt
  • 1 Cup Milk
  • 2 Eggs
  • 1/2 Cup Melted Butter
  • 2 Teaspoons Vanilla Extract
  • 3/4 Cup Dried Cranberries (Or other mix in item! Raisins, Walnuts, Blueberries, etc. It’s also yummy to omit the fruit and when serving drizzle with a little Maple Syrup!)

Instructions

  1. Preheat the oven to 350.
  2. In a large bowl mix oats, brown sugar, cinnamon, baking powder and salt.
  3. Add milk, eggs, melted butter and vanilla extract.
  4. Fold in the fruit.
  5. Spread into a 9 by 13 inch baking dish.
  6. Bake in oven for 40 minutes.
  7. If you wish, top with homemade Slow Cooker Applesauce. (Psst! This is the best way!)

Slow Cooker Vegetable Soup

 

I don’t know about your house, but here in Indiana we’ve gotten about 13 inches of snow and temperatures (with the wind chill) as low as -40. Yes, -13 was our HIGH. YIKES!! What’s a gal to do?
