Chocolate Whoopie Pie Recipe
Yesterday I had a new whoopie pie pan arrive in the mail and I just couldn’t wait to use it. So I made some chocolate whoopie pies. YUM.
Wilton Nonstick 12-Cavity Whoopie Pie Pan
Ingredients:
1 1/4 cups all purpose flour
1 1/2 tsp baking soda
1/2 cup unsweetened cocoa
pinch of salt
6 tbsp butter, softened
1/3 cup vegetable shortening
3/4 cup light brown sugar
1 tsp molasses
1 large egg
1 tsp vanilla extract
2/3 cup milk
Recipe
(1) Preheat the oven to 350. Lightly grease pan. Mix together flour, baking soda, unsweetened cocoa, and salt.
(2) Place the butter , shortening and sugar in a large bowl and beat until pale and fluffy. Beat in the molasses, egg, and vanilla.
(3) Add half of the flour mixture followed by the milk. Mix. Add the rest of the flour mixture.
(4) Spoon into pan (if you don’t have a whoopie pie pan spoon like you would cookies – and get a whoopie pie pan! You will love it!!) Make sure you don’t add too much cake mixture or else you will have HUGE cakes! Bake 12-14 minutes or until just firm to the touch. Let cool. Frost and sandwich together!
Aren’t these cupcake toppers the cutest? I have a thing for vintage valentines! I bought these at Hobby Lobby last year. They were so cute I wanted to use them for something special and guess what? I ended up just not using them! So what could be cuter than whoopie pies to share with all of you? 🙂
