Left Over Halloween Candy Cupcake
So I’m sure most of you have had lots of candy. And sometimes you think — what are we going to do with all of this candy. Have no fear. Make cupcakes! {I know because you need MORE sugar added, right?}
But these are the yummiest and most fun cupcakes to eat. Why because they are a surprise!!
You don’t know what you are going to get until you take a bite.
And did I mention – easy? You can use any mix. Any recipe. Any icing.
Here is the recipe I used. It is a really easy, yummy yellow cake cupcake mix. (If that made sense to you!)
I got it from Elinor Klivans cupcakes book. {Check it out people….}
This will make 12 cupcakes.
1 1/4 cups all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large egg
1 large egg yolk
1 cup sugar
1/2 cup canola oil
1 tsp vanilla extract (I used 1 tbsp — I love vanilla)
1/2 cup sour cream
1. Mix dry ingredients. Set aside.
2. Use electric mixer and beat egg and yolk and sugar about 2 1/2 minutes. It will be thick and cream colored. *Do not under mix! It lightens the texture!
3. Mix in oil and vanilla until blended. Mix in sour cream until no white streaks are left.
4. Add flour mix.
5. Fill cupcake pan half full. (A little neater than mine!) 🙂
6. Pick out your candy!
I ended up with chocolate covered pretzels, milk duds, 3 musketeers, m&ms, twix, kit kat, snikers, milky way and dark milky way. I decided not to use the whoppers — mostly because I’m not a fan! 🙂
7. Place candy in cupcake.
8. Fill back up.
9. Bake at 375 for about 16-18 minutes.
10. Cool and frost.
YUMMMM.
Now. Get a glass of milk.
And take a bite….
{Ok that last one was after a few bites…see the gooey caramel and chocolatey goodness?? YUM!}

*Best when served warm so its so gooey and yummy!
My icing was just a basic recipe.
2 1/2 cups butter
5 cups powdered sugar
1 tbsp vanilla
2 1/2 tbsp milk
Beat butter. Add powdered sugar. Beat. Add vanilla and 1 tbsp milk. Beat. Add more milk as necessary. (Sorry no pictures. This makes a BIG batch of icing! And these cupcakes are so yummy and sweet it doesn’t take much.)

I LOVE this idea!! I wish I had left over candy to make some… we barely had any trick-or-treaters this year, but somehow (my husband) all the candy in my house disappeared.
